The challenge is to learn, or create, a new bowl each week.
This week I’m developing a Tonkotsu ramen bowl. The chef from a local Japanese restaurant heard that I was getting my ramen game on and wanted to taste a bowl of my ramen. I want to get this right and impress him. A running thread of my progress on Twitter here.
- Last week I worked on tokyo-style ramen. My best bowl so far.
- A no-miso vegan ramen bowl before that.
- A Choris bowl using local goan ingredients before that.
And I am still no closer to understanding what makes ramen ramen.
